At RK Beef we purchase calves from a dairy farm located 20 minutes from our farm.  Custom slaughtering and butchering are done at 3-D Meats, a small family-owned, USDA inspected meat packer 20 minutes away.  Purchasing and processing cattle locally minimizes shipping, which can be stressful to cattle’s health.  The corn and hay they eat are grown here on the farm.  Keeping things local also reduces costs by simplifying our supply chain.  The calves come to our farm where they are raised, then sent to the meat packer, then to the customer.


Feeding grain to cattle is an ancient technique which consistently produces top quality beef.  The Old Testament book of Kings 1 mentions stall-fed cattle in Chapter 4 as a staple in King Solomon’s palace around 900 B.C.  These cattle were kept in confinement and fed primarily grain, probably barley which has 90% of the feed value of today’s corn.  This diet allowed the cattle to reach a finished weight at a young age, still technically considered a calf.   This is the same type of beef that would have come from the fatted calf Jesus spoke of in his prodigal son parable in the 15th chapter of the New Testament book of Luke.  By finishing our cattle at such a young age, it is impossible for them to get mad cow disease.

Naturally Raised

In addition to corn, RK Beef cattle receive some hay and an alfalfa/soybean-based supplement that provides everything the cattle need that they can’t get from the corn and hay.  RK beef cattle receive no hormones or implants.  We administer antibiotics only to animals that are sick and not of slaughter age.It is rare that antibiotics are needed beyond the first 3 months of a calf’s life.


Aging is simply letting the side of beef hang in a walk-in refrigerator.  This seemingly non-value-added process tenderizes as well as enhances the flavor of the beef by allowing naturally occurring enzymes to break down the connective tissue within the beef.  Most beef you find in a grocery store has been aged for a week.  Premium steakhouses boast that their beef is aged for 4 weeks but upon close inspection we find it is only the loin, which contains strip steaks and filets, and the prime rib which are aged for 4 weeks.  These 2 cuts represent about 15% of the carcass by weight.  RK Beef ages the entire carcass for 3 weeks.


A half means you will get an entire side of beef which will yield about 200 lbs. of usable meat.  A quarter, or split side, means you are splitting a side with someone else which should yield about 100 lbs. of beef.  You get the same mix of cuts as you would if you purchased an entire half.  An eighth means you are splitting a side with 3 other people which should yield about 50 lbs. of beef.  You get essentially the same mix of cuts as you would if you purchased a quarter or entire half.  The only difference is choosing between a Rump Roast and a Tip Roast.

It is also possible to get a half, quarter, or eighth without the premium cuts.  This reduces the weight by about 25% and the cost by about 45%. 


We purchase male Holstein calves at RK Beef.  Holstein is a dairy breed but the male calves have little value on a dairy farm since they can’t produce milk.  We add value to these calves through our feed, labor and management to produce consistently flavorful, well-marbled beef.

Not much manure collects in the barn from April through October because the cattle choose to be outside most of the time while the weather is nice.  As the weather becomes inclement, the cattle choose to spend more of their time inside.   We chop and bale the remaining plant residue from the corn fields to use as bedding for the cattle.  This keeps them dry and warm and clean in the winter.  In addition to the animal waste, there is a substantial amount of soil nutrients in the cornstalks which are returned to the soil when we spread manure onto the fields in the spring.  This, along with maintaining our soils at the proper pH levels with natural limestone, reduces our need for purchased plant nutrients.

Diverting water from an underground spring into a water tank provides cool, clean water for the cattle for about 9 months of the year.  The spring typically goes dry from August to October.  The strong flow from the spring during the rest of the year ensures the water in the tank stays above freezing, providing fresh water throughout the winter using zero energy.
